Tempeh Goddess Salad

Sunday night Richard?s grandparents (hi Dennis and Jean!) came over for dinner. They?re the meat, potatoes, green beans and a big glass of whole milk kind of people. They grew up in a time where everyone ate what came from their garden and spent the afternoon butchering their chicken if it was on the menu for dinner.

They?ve been so accommodating of my vegan diet; however, I don?t think they totally understand what we eat. (Richard isn?t vegan but 99% of the food in the house is vegan.) We went with one of our easiest, yummiest meals: Tempeh Goddess Salad with fresh baked bread. This meal is so satisfying and takes only 10 minutes to make!IMG_8042.JPG

Before dinner we had to break out the almond milk. Grandpa Stephens drinks a big glass of milk at every meal and Richard was excited to have him try a non-dairy milk. We chose Silk Pure Almond- good enough ingredients, yummy taste and vegan.

Watching Grandpa and Jean try the almond milk was hysterical. Despite their hesitance they actually thought the milk was tasty and that they could drink it again.

Tempeh is awesome. It?s soy-based but with barley, millet and brown rice. The Lightlife tempeh has 40% of your daily protein needs in one serving (1/2 package)!

I sauteed 1/2 of a large vidalia onion and two packages of tempeh (cut into cubes) with olive oil, tamari, paprika and pepper on medium heat. We leave this on the stovetop as long as possible to soak in all the flavors!

With the tempeh cooking on the stove I prepared a bed of pre-washed spring mix, tomatoes and avocado.

Topped with a little Goddess dressing and served with a side of whole grain bread with Earth Balance, the final result was satisfying, healthy and fun to eat. I was surprised by the good reviews from the whole table- and when everyone cleaned their plates!

In no way was I trying to convert anyone; rather, Richard and I love showcasing how surprisingly delicious and healthy a vegan diet is. The different food brought up great conversation of what?s on our dinner plates and how we were brought up affects our food choices and what we consider normal.
